No. 18 Oklahoma State needed its defense to deliver in the second half Saturday. Evan Jackson provided the biggest play of the afternoon.
Jackson returned a fourth-quarter fumble 28 yards for a touchdown, helping the Cowboys pull away from UCF for a 42-28 victory in front of a sold-out Boone Pickens Stadium.
Oklahoma State improved to 4-1 overall and 2-0 in Big 12 play, extending its winning streak to four games and defeating UCF for the first time in program history.
After a back-and-forth opening half ended tied at 21, the Cowboys outscored the Knights 21-7 after halftime to secure the victory.
Quarterback Drew Mestemaker completed 19 of 28 passes for 304 yards and two touchdowns without an interception. Justin Bowick led Oklahoma State's receivers with six catches for 98 yards and a touchdown.
But the defining moment came from the defense.
Jackson's Defensive Touchdown Changes Everything
Oklahoma State opened the second half with a defensive stop before Sam Keltner connected on a 40-yard field goal to give the Cowboys a 24-21 advantage.
UCF responded by marching into Oklahoma State territory, but the Knights missed a 45-yard field goal that would have tied the game.
The Cowboys capitalized with another scoring drive. Mestemaker connected with Bowick for gains of 19 and 32 yards, while Ayo Adeyi added a 16-yard run to move Oklahoma State inside the UCF 10-yard line.
The drive stalled, but Keltner converted a 29-yard field goal to extend the lead to 27-21 with 12:11 remaining.
Then came the play that changed the game. On UCF's ensuing possession, quarterback Keyone Jenkins lost the football while being tackled for an 11-yard loss.
Jackson recovered the fumble and returned it 28 yards for a touchdown. The play was reviewed and upheld, and Mestemaker powered into the end zone on the two-point conversion to give Oklahoma State a 35-21 advantage. Suddenly, a six-point game had become a two-touchdown lead.
The Cowboys' defense followed with another stop, forcing a turnover on downs to give the offense an opportunity to put the game away.
Mestemaker connected with Chris Barnes for a 27-yard gain before finding Wyatt Young for a five-yard touchdown, extending Oklahoma State's lead to 42-21.
UCF added a late touchdown, but Cameron Epps intercepted Jenkins on the game's final possession to seal the victory.
Cowboys Overcome First-Half Shootout
The game initially appeared headed toward a much closer finish. Oklahoma State's opening possession ended when Caleb Hawkins fumbled, giving UCF favorable field position.
The Knights capitalized with a one-yard touchdown pass from Jenkins to Grayson Brousseau.
Mestemaker answered with an 11-yard touchdown run, but UCF regained the lead on a 12-yard touchdown pass to Josh Derry.
The Cowboys responded again in the second quarter when fullback Morgan McPhaul scored on his first carry of the season, tying the game at 14.
After Oklahoma State's defense forced consecutive punts, Mestemaker found Bowick for an 18-yard touchdown to give the Cowboys a 21-14 advantage.
But UCF mounted another lengthy drive before halftime, with Jenkins connecting with Tyren Hornes for a three-yard touchdown with 16 seconds remaining.
The teams entered the locker room tied at 21.
Defensive Standouts Lead Second-Half Turnaround
Oklahoma State's defense struggled to get off the field during stretches of the first half, but the Cowboys found answers after the break.
The Knights finished with 375 total yards, including 265 passing and 110 rushing.
That represented a significant improvement for Oklahoma State's run defense after surrendering 335 rushing yards against West Virginia in its previous game.
Linebacker Ethan Wesloski led the Cowboys with 15 tackles, continuing his productive start to the season.
Tate Romney added 12 tackles and half a sack, while Quinton Hammonds finished with 11 tackles and Isaiah Chisom contributed nine.
The Cowboys held UCF to just seven second-half points after allowing three touchdowns before halftime.
Jackson's defensive touchdown and Epps' game-ending interception highlighted the second-half performance.
Mestemaker, Bowick Keep Offense Moving
Oklahoma State finished with 414 total yards, averaging 6.9 yards per play. Mestemaker accounted for three touchdowns, throwing for two and rushing for another.
Bowick delivered his best receiving performance of the season with six catches for 98 yards and a touchdown.
Miles Coleman added four receptions for 69 yards, while Young finished with five catches for 52 yards and a touchdown after entering the weekend with questions surrounding his availability.
Hawkins carried the ball 23 times for 83 yards, while Adeyi added 21 yards on four attempts.
Keltner remained perfect on the season, connecting on both field-goal attempts from 40 and 29 yards.
Oklahoma State Stays Unbeaten in Big 12 Play
Saturday's victory marked another step forward in Eric Morris' first season leading the Cowboys.
After opening the season with a loss to Tulsa, Oklahoma State has responded with four consecutive victories, including wins over Oregon, West Virginia and UCF.
The Cowboys are now 2-0 in Big 12 play for the first time since 2022.
Oklahoma State will look to continue its momentum next Saturday when it travels to Houston for another conference matchup. Kickoff is scheduled for 6:30 p.m. CT on FOX.
For now, the Cowboys can celebrate their first victory over UCF — one that required a halftime defensive turnaround and a game-changing touchdown from Jackson.
