Jennings was the centerpiece of the offensive explosion.
The senior quarterback completed 33 of 39 passes for 464 yards and three touchdowns, while also rushing for another score.
He put together a school-record streak of 21 consecutive completions, the second-longest single-game run in ACC history.
It was Jennings' 10th career 300-yard passing game and his second 400-yard performance.
More importantly, the night pushed him into even more rare territory in SMU history.
Jennings became the program's career leader in passing yards and completions, finishing the night with 9,162 career passing yards and 722 completions.
His four total touchdowns also pushed him to 78 touchdowns responsible for, breaking Tanner Mordecai's previous SMU record of 76.
For a player who has already rewritten several pages of the Mustangs' record book, this might have been his most complete statistical night yet.
Knight made sure Jennings had a reliable target.
The senior receiver caught 11 passes for a career-high 164 yards and one touchdown, including a late 28-yard scoring reception that helped SMU put the game away.
Knight also finished with 208 all-purpose yards, adding 44 yards on punt returns. It marked the fourth 100-yard receiving game of his career and his sixth game with at least 100 all-purpose yards.
The honor isn't new territory for either player.
Jennings was named Earl Campbell Tyler Rose Award Player of the Week after throwing for 430 yards and three touchdowns against Florida State earlier this season.
He also received Honorable Mention recognition after his five-touchdown performance against UC Davis.
Knight earned Honorable Mention last season following a 162-yard receiving performance against Boston College.
